If you’re a chocolate connoisseur like myself, then you’re in for a literal treat. Our delectable chocolate raspberry truffles will cause your taste buds to fall in love.

Preparing your food at home, whether it’s a meal, snack, or dessert, is a great way to keep your diet in check. When you order food from a restaurant or buy a prepackaged treat at the store, you have no way of knowing what kinds of ingredients have been added in. On the contrary, homemade items allow you to know exactly what you’re eating, which makes it much easier to limit caloric intake and eat clean!
These chocolate truffles are not necessarily a “diet” food, but you can feel good about the fact that they’re created with natural ingredients. The truffles themselves are made with naturally sweet ingredients like raspberries, coconut, dates, and vanilla extract. The salt pulls some more sweetness from the cocoa powder while the walnuts add a wonderful layer of texture.
Each one of these dairy-free, gluten-free, and vegan-friendly chocolate raspberry truffles contains 144 calories. If you can manage to eat just one, you can totally fit that into your diet! That said, if you want to eat more than one, we certainly won’t judge. Remember, it is the designated day for eating chocolate, after all!
An Added Benefit of DIY Valentine’s Day Sweets
An added benefit of making your own Valentine’s day truffles at home is that the effort you put in will show how much you care! It’s easy to buy a box of chocolates, but making your own? That’s love. The best part? These scrumptious chocolate raspberry truffles require just 10 minutes of prep time! Of course, you will have to let them chill for 3 hours, but they’re worth the wait.
How to Make the Perfect Chocolate Raspberry Truffle
Grab your food processor and add the raspberries, walnuts, coconut, dates, cocoa powder, vanilla extract, and salt to the bowl. Blend the mixture until it’s nice and smooth. Next, line a baking tray with parchment paper or foil and form the mixture into one-inch balls with your hands. You should be able to roll 12 truffles out of this recipe.
Once all of the balls are formed, chill them in the refrigerator for 15 to 30 minutes. While the truffles are chilling, make your outer coating by placing the coconut and freeze-dried raspberries in the food processor. Pulse a few times until the coconut turns a pretty pink color! Remove the cooled truffles from the refrigerator and roll each ball in the outer coating until evenly covered. Place them back on the tray and into the refrigerator for another 2 hours and 30 minutes, or until set. Enjoy!
- 1 cup raspberries frozen
- 1 cup walnuts raw, unsalted
- 1/2 cup coconut dessicated
- 6 Medjool dates pitted
- 3 tablespoon cocoa powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup coconut desiccated
- 3 tablespoon freeze-dried raspberries
Combine the truffle ingredients in a food processor and blend until smooth.
Form into 1″ balls and place on a lined baking tray.
Chill in the refrigerator for 15-30 minutes.
Meanwhile, combine outer coating ingredients in a food processor and pulse 2-3 times, or until the coconut turns pink.
Remove the truffles from the fridge and roll each of them in the outer coating to cover each ball.
Replace in the refrigerator and let chill for about 3 hours or until set.
Store in a closed container in the refrigerator for up to 4 days.
